Scallops, U.S. Diver-Caught

U.S. diver-caught scallops are collected by hand, with minimal effects to the surrounding marine environment. Sometimes these may be labeled “day boat”. The term “day boat” indicates that the boats catching the scallops return to shore to offload at the end of each day, rather than spending days at sea. Scallops on boats that stay at sea for many days are often treated with preservatives to keep them fresh until they are delivered to shore. These preservatives are not necessary on day boats (though they are sometimes used anyway).  Untreated scallops are also often called “dry” scallops. Ask if scallops labeled “day boat” are also diver caught.
